Hi Elizabeth,
You could reduce the sugar from 3/4 cup to 1/2 cup. I did make two batches, one with meyer lemons and one with regular lemons. The meyer lemons we had seemed exceptionally tangy, so I used the same amount of sugar in both batches.
Thanks for the great question since regular lemons are so much more acidic than meyers!

Substitute arrowroot powder/starch (they are the same) for the cornstarch, using the same amount. I hope you enjoy it. And you are welcome. Please let us know if there are any recipes you would like to see.
