The recipe calls for 1 cup of mashed bananas (2-3 ripe bananas). More brown spots on the bananas equal sweeter, more banana flavor.<\/p>\n
In a medium bowl, whisk together a gluten free flour blend, brown sugar, baking powder, baking soda, xanthan gum, and salt; set aside.<\/p>\n
In another bowl, whisk together bananas, vegan margarine (melted and cooled to room temperature), alternative milk, and cider vinegar. Combine wet and dry ingredients and gently combine without over mixing. Fold in chocolate chips.<\/p>\n
Immediately pour into a lightly greased 8-inch square baking pan and smooth surface. Sprinkle with additional chocolate chips.<\/p>\n

Bake 25-30 minutes, or until a toothpick comes out clean when inserted in the middle. Remove from oven and cool on a wire rack.<\/p>\n
